Break one extra large egg.
Add a pinch of salt.
Add half a tablespoon of sugar.
Mix it all in a large bowl.
Add a cup of whole milk.
Beat it thoroughly.
I like to beat it so it foams until it doubles in volume.
Add 4 heaping tablespoons of all purpose flour.
Mix it all.
We want the batter to have the consistency of sour cream.
In this example, the batter seems be too thin for my liking.
An easy fix for it is to add another full spoon of flour.
Add more flour if necessary.
I use 5-6 heaping tablespoons of flour to make enough pancakes for a family of 4-5.
Pre-heat a frying pan on low heat while you mix the batter.
I put the heat on the 2nd to lowest setting.
Put some vegetable or canola oil on the frying pan.
Or use butter instead.
Add a heaping teaspoon of baking soda to the batter.
Mix it all thoroughly.
The batter is ready - bubbly and looks good.
Ask your family what and how they want their pancakes.
I peel and cut an apple while waiting for the frying pan to get hot.
Sometimes I add carrots.
Prepare whatever fruits, vegetables, or nuts you will add later into the batter.
No rush to mix it into the batter yet.
Let's put apples aside for now.
First I am going to fry plain pancakes.
Prepare as many plates as necessary - for 4 people in this example.
Use a ladle or some big spoon to pour batter in the middle of a preheated frying pan.
I like to make one pancake at a time.
Though, I could fit 4 pancakes on this frying pan to make them in a rush.
Watch for bubbles popping as you making the pancake.
Popped bubbles should leave a hole in a well cooked pancake.
First holes appear at the edges of the pancake.
Wait for holes to appear in the middle of the pancake.
Once you see holes stay open in the middle that is the time to flip the pancake.
Wait about a minute or so for the frying side to be a golden color.
Move the ready pancake to a plate.
Yes, this looks good.
In this example, I make 3 plain pancakes.
While making the last plain pancake is the time to add apples.
Mix cut apples with batter.
This one already looks good.
Let's flip it.
Give it time to golden up and than move it to a plate.
I made 3 plain pancakes.
Add vegetable oil (or whatever you use) as necessary.
I will make all other pancakes with apples.
Frying pancakes is all the same no matter what stuffing you use.
Wait for the holes to appear in the middle of the pancake.
It takes about 5 minutes or so on this low heat.
Then flip it to the other side.
The pancake is basically ready.
So it takes much less time to golden the other side.
This one looks good.
And so it goes.
It takes about 1 hour to fry a dozen pancakes one by one.
Or it takes about 20 minutes to fry 4 pancakes at a time.
I like to make them one by one even though it takes longer.
Yes, they are fluffy the way pancakes should be.
Let's break one with apples apart for you to see the texture.
It looks great and tastes yum-yum.
Everyone in my family gets pancakes the way they like them.
And the best pancake is the one made for you the way you like it!
Plain for one and with apples for others or with jam - the way I like it.
And the empty jam jars I use to make the best sustainable aquariums.
Eat the pancakes with jam and make beautiful aquarium gardens!
Here is a 1 liter aquarium garden with snails and scuds.
With land plants growing on top with roots in water.
And next to it is a 3 liter sustainable aquarium garden with snails, scuds, and dwarf guppies.
There are land plants on top growing with their roots in water.
There are aquatic plants and land mosses growing in water.
All growing beautifully without water changes, no filters, no air pumps.
Just a couple feedings a week with food made of what grows inside of the aquariums.
And that is all while my family enjoys eating the best pancakes I made for them.
Have fun and the best pancakes :)
